Baked Veal Loaf Recipe

  • 3 pounds lean veal, ground
  • 1/2 pound salt pork, ground
  • 6 Common crackers (old-style round ones)
  • 1/4 cup milk
  • 1 egg, beaten
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon onion juice
  • 2 tablespoons lemon juice hot water for basting

Crush crackers to make coarse crumbs, mix with veal and pork. Add milk and egg. Add salt, pepper, onion and lemon juices, mixing well. Pack firmly into a large greased loaf pan, about 5 x 12 x 3, and bake in a 300 oven for 2 hours. Baste frequently with a mixture of meat drip pings (removed by tilting the pan) and an equal amount of hot water. Prick top of loaf with fork so basting mixture can soak into the meat. This loaf will serve 6 to 8.
