Baked Stuffed Eggs Recipe

  • 9 hard-boiled eggs
  • 6 tablespoons butter
  • 1 teaspoon grated onion
  • 1 1/2 teaspoons prepared mustard
  • 1/2 teaspoon salt
  • pinch of pepper
  • 1 cup sour cream
  • 1/2 cup dry breadcrumbs

Peel eggs and cut in half lengthwise. Remove yolks and mash, mixing with 3 tablespoons of the butter, which has been softened, then adding the onion, mustard, salt and pepper. Fill egg whites with this mixture and place in buttered baking dish, cut side down. Cover with the sour cream.

Melt the remaining 3 tablespoons of butter and mix with the breadcrumbs; sprinkle over eggs.

Bake in 350 oven for about 30 minutes. Will serve 5 to 6.
