- 2 pounds beef or pork liver, unsliced
- 1 teaspoon salt
- 1/4 pound salt pork
- 1 large onion, peeled and quartered
- 1/2 teaspoon sage
- 1/2 teaspoon pepper
- 1/2 cup water, if needed
Wipe liver but do not scald. With sharp knife, make cuts 1 inch long here and there over surface of liver, and place it in a baking dish which has a lid. Sprinkle with 1 teaspoon salt. Put salt pork and onion through food grinder. Mix with sage and pepper and spread over top of liver. Cover and bake in 400 oven for about 45 minutes. Uncover and bake 20 minutes longer, adding water if dish becomes too dry during baking. The flavors of the salt pork and onion combine very happily with that of the liver. Serves 6.
