Baked Limas Recipe

  • 2 packages (10 ozs each) frozen lima beans
  • 1 medium onion, chopped
  • 3 tablespoons butter or margarine
  • 2 tablespoons flour
  • 1 can (1 lb tomatoes
  • 1 teaspoon salt
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon celery salt
  • 1 cup shredded cheese food or Cheddar cheese
  • Paprika

Cook beans according to directions on package, until barely tender. Drain.

Pan-fry onion in butter in skillet 1 minute. Add flour and stir to blend. Add tomatoes, salt, garlic salt, and celery salt. Simmer until thickened. Add cooked beans.

Pour into a 1 1/2-quart casserole. Sprinkle cheese and paprika over top. Cover with lid or foil and bake in a moderate oven (350°F) 30 minutes. Serve hot.

Yield: 6 to 8 servings.
