- 3 pounds lean raw lamb, ground
- 1/2 pound sausage meat
- 1/2 cup dry breadcrumbs
- 1 egg, beaten
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup cream for gravy
Mix lamb, sausage, breadcrumbs and egg. Make white sauce by adding flour to melted butter in a small pan, then adding the milk and stirring until it thickens over low heat. Add salt and
pepper to sauce, then blend sauce into meat mixture. Pack firmly into a greased large loaf pan, about 5 x 12 x 3, or form into a long loaf on a flat baking pan.
Bake in 325 oven for 1 hour and 30 minutes. Baste from time to time by spooning pan juices over the meat. Remove loaf from pan to serving dish and add 1/2 cup cream to pan juices. Thicken with a thin paste of flour and water stirred until smooth, cooking for 3 minutes. Serve in a sauce boat. Serves 6 to 8.
