- 2 medium onions, chopped
- 1 green pepper, chopped
- 1 stick (1/2 cup) butter or margarine
- 1/2 cup chopped pimento
- 6 tablespoons flour
- 4 cups (1 qt) milk
- 1 teaspoon paprika
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 6 cups cubed cooked potatoes (about 6 medium potatoes; three-quarter-inch cubes)
- 1 cup shredded cheese food or Cheddar cheese
- Paprika
Pan-fry onion and green pepper in butter in a large skillet about 3 minutes. Stir in pimento and flour. Add milk gradually; stir and cook until thickened. Add paprika, salt, pepper, and potatoes. Pour into a 3-quart casserole; cover with shredded cheese. Sprinkle paprika over top. Bake in a moderate oven (350°F) 30 to 45 minutes, or until bubbly. Serve hot.
Yield: 10 to 12 servings.
