- 4 avocados, peeled and halved
- Zesty French Dressing
- 1 package (3 ozs) lime-flavored gelatin
- 1 cup hot water
- 1/2 cup cold water
- 1/2 cup mayonnaise
- 1 tablespoon finely chopped onion
- 1/2 cup finely chopped celery
- 1 tablespoon chopped pimento (optional)
- 2 tablespoons lemon juice
- Lettuce
Place avocados in a shallow dish; pour French dressing over and chill in refrigerator at least 15 minutes.
Dissolve gelatin in hot water; add cold water, mayonnaise, onion, celery, pimento, and lemon juice. Pour into a pan (8×8-inches) ; chill in refrigerator until firm. Cut into three-quarter-inch cubes.
Arrange avocados on crisp lettuce. Top each with cubes of gelatin. Serve with Zesty French Dressing, if desired.
