Quick and Simple Whole Wheat Waffles Recipe
Ingredients for 12 Waffles
- 2 cups whole wheat flour
- 5 teaspoons baking powder
- teaspoon salt
- tablespoon sugar
- 3 egg whites, stiffly beaten
- 3 egg yolks, well beaten
- 2 cups milk
- 4 tablespoons melted shortening
Preparation
Heat waffle iron. Mix dry ingredients thoroughly. Beat egg whites just stiff enough to stand in peaks, but not dry. In separate bowl, combine well-beaten egg yolks and milk and add to dry ingredients gradually, stirring just until well blended and smooth. Do not overbeat. Stir in melted shortening. Fold in stiffly beaten egg whites.
Cooking
Bake at once in hot waffle iron, filling each compartment only two-thirds full. Waffles are baked when no steam escapes from edges of waffle iron. Do not attempt to lift upper side of iron until you are reasonably sure waffles are done, as you will tear waffle, ruining possibility of perfect texture of finished product. Waffle iron must be thoroughly heated before batter is poured in. If uncertain about proper preheating time, place 1 teaspoon cold water inside cold iron. Put top down and turn on current. When steaming stops, temperature is correct.
